Mango, Sandalwood Nuts, Labne with Burnt Honey Granita

For the Granita

2 cups honey
1-cup whey (left over from making the labne)
1 lemon

For the Labne

2 cups natural yoghurt, hang the yoghurt in a muslin cloth overnight to extract the whey
2 mangos
½ cup sandalwood nuts (or macadamia nuts)
6 marigold flowers
Sprinkle of bee pollen
1 frame of honeycomb

or the Granita:

1. Place honey in a pot and place on a high heat.

2. Boil for a few minutes until the puff of smoke come from the bubbles. Carefully add the whey in a couple of stages.

3. Zest and juice the lemon and add to the pot.

4. Pour into a dish and freeze preferably overnight.

For Serving:

1. Place the honey frame on a wooden board.

2. Peel and randomly chop the mango.

3. Shave the sandalwood or macadamia nuts.

4. Scatter both over the honey frame.

5. Randomly blob labne around the fruit.

6. Scrape the granita with a fork into fine shavings. Spoon the granita over the frame and finish with petals of the marigold.

7.Once the dessert is finish the honeycomb makes a great natural gum.
