Masala Tea

1 litre hot water
75ml evaporated milk
1 slice of ginger
4 peppercorns
5 cloves
5 cardamom pods
1 cinnamon stick
2 bay leaves
3 heaped tbsp of Ceylon loose leaf tea
Sugar, to taste

Add hot water to a saucepan. Turn the heat on low and add the tea, bay leaves, cinnamon stick, cardamom, cloves, peppercorns and ginger.

Allow the mixture to steep for around five minutes. If you like strong tea, allow it to steep for a further five minutes.

Add the evaporated milk and sugar to taste and strain into a cup or teapot ready to serve.
