Melted raclette cheese with marble potatoes and purslane

For the marbled potatoes

900g assorted petit new potatoes, well washed
Olive oil, as needed
5 sprigs thyme
1 head garlic, split

For the potato puree

190g butter
450g new potatoes, peeled
350ml double cream
120ml single cream, or as needed
30g aged Gruyere, grated
1 1/4 tsp creme fraiche

For the raclette

450g raclette, thinly sliced
Purslane, for garnish
For the marbled potatoes:
1) Preheat the oven to 150C/Gas Mark 2.

2) Put the petit new potatoes in a large saucepan, cover with cold water, and generously season with salt. Bring to a boil, and strain immediately.

2) In a baking tray, cover the potatoes completely with olive oil and add the thyme and garlic. Bake until the potatoes are tender.

3) Let cool to room temperature and peel the potatoes with a small paring knife.

For the potato puree:
1) In a small frying pan, melt the butter over medium heat until the butter solids turn brown. Remove from the heat.

2) Put the potatoes in a pot of salted water and bring to a boil and cook until tender. Drain.

3) Pass the potatoes through a food mill. Add the brown butter and cream and mix to combine. Adjust consistency with some of the single cream; you may not use all of it. Stir in the Gruyere and creme fraiche. Pass through a fine mesh sieve. Season to taste with salt.

For the raclette:
1) Using an ovenproof plate, place a spoonful of the potato puree on each plate. Arrange a few of the whole fingerling potatoes on top of the puree. Place about 110g of the raclette on top of the potatoes and flash the dish under the grill just until the cheese bubbles.

2) Garnish each plate with purslane.
