Michel Roux's Perfect Vinaigrette with Salad Composee

VINAIGRETTE
5 parts of olive oil
1 parts of red wine vinegar
1 x finely chopped shallot
2 teaspoons of dijon mustard
Salt
Pepper
SALAD
1 x mesulin mix
1 x bunch of wild dandelions
1 x curly lettuce (Scarole)
1 x whole frisse
1 x bag of baby spinach
1 x tin of chickpeas
1 x whole cauliflower – florets boiled
1 x bag of radishes
1 x cucumber
Portion of croutons – rubbed with garlic
1 x handful of cherry tomatoes
1 x bunch of herbs (basil, tarragon)
For the vinaigrette, mix all the ingredients together and set to the side.
For the salad, cut all ingredients into mouth-size pieces and mix all ingredients in a bowl. Then pour in the vinaigrette, delicately toss and serve.
