For the pastry, mix the cornmeal and strong bread flour with the water until it forms a paste and rest in the fridge for 20 minutes.
Fry the beef and onions until dark brown then add the Worcestershire sauce, bring to the boil then chill.
Roll out the pastry as thin as possible, brush with egg yolk, fill and roll up like a pancake roll, place into corn husk and steam for 2 hours.
