Nalesniki, aka Crepes

Try these Polish pancakes, filled with sweet cream cheese and sour cherries.

For the batter

475ml milk
475ml sparkling water
1 egg
1 egg yolk
420g plain flour
200g caster sugar
1 pinch salt
1/2 tbsp bicarbonate of soda
1/2 tbsp baking powder

For the filling

925g cream cheese
600g caster sugar
1 (680g) jar drained, pitted sour cherries in a light syrup
Cooking spray, for tin
Whipped cream, for serving
Chocolate powder, for serving
1) Mix all the batter ingredients well in a blender and refrigerate for 1 hour.

2) For the filling, in a large bowl, put the cream cheese, sugar and the cherries. Combine well and reserve.

3) Spray a frying pan with cooking spray. Pour 120ml of batter into the pan and cook until firm (tan, not brown). Turn over and cook the other side. Transfer cooked crepes to a large plate and repeat with remaining batter.

4) Fill the crepes with the cheese and cherry filling and fold as desired. Arrange on a serving platter and serve hot, with whipped cream and chocolate powder.
