Papaya and soybean salad

2 tbsp grapeseed oil
1 tsp ground coriander
1 tsp ground cardamom
1 tsp fennel seeds
1 tsp brown mustard seeds
10g curry leaves
150g frozen soybeans, thawed
300g papaya, peeled, seeded and cut into large chunks
160g cooked rice (blend basmati with wild rice or any rice)
Pinch of salt and pepper
1 tsp lime juice
1) Place a small skillet over a medium-high heat and add the oil. Add the spices and toast for 1 minute. Stir in the soybeans and cook for about 3 minutes. Allow to cool.

2) Put the papaya chunks into a salad bowl along with the rice and cooled soybean mixture. Add salt, pepper and lime juice and toss well. Taste and add more salt if needed.
