Parsnip Chips

1 litre vegetable oil
Parnsips, peeled into thin strips
Ground cumin
Rock salt

Fill a pan with the vegetable oil and bring to around 107°C.

Take a generous handful of the peeled parsnips and drop straight into the hot oil. They are crisp and ready once the bubbles disappear.

Remove from the oil and drain on kitchen paper.

Sprinkle rock salt and ground cumin over the top to finish.
