Paula's chicken nuggets

1 package dry ranch seasoning mix
75g panko breadcrumbs
1/2 tsp salt
1 large egg, lightly beaten
150g plain flour
3 boneless skinless chicken cutlets, cut into 2.5cm cubes
Vegetable oil, for frying
1) Pour the oil to a depth of 5cm in a large saucepan or deep fryer and heat to 185C.

2) Put the flour in a small bowl and the egg mixture in a second bowl. In a third bowl, combine the ranch seasoning mix, panko breadcrumbs and salt.

3) Dredge the chicken cubes in flour, dip in the beaten egg and then coat in the panko mixture.

4) Fry the chicken nuggets, in batches, for 5-6 minutes or until done.

Serve nuggets with a dipping sauce of choice.
