Poached Angelfish

Bring the fish stock to a simmer and add the baby potatoes, 10 minutes later the onions and carrots, 10 minutes later the leeks, radishes and thyme.
Add the fish fillets and gently poach for 2 minutes, add the herbs and remove from the stove.
Correct the seasoning, refresh with fresh lemon juice and serve a generous helping of fish, broth and veggies.
Add a dollop of aioli if you wish.
