Polenta with herbs

2 tbsp olive oil
1 tbsp minced garlic
1/2 tsp red pepper flakes
590ml chicken stock
590ml milk
165g polenta
1 tsp salt
40g freshly grated Parmesan or a combination of Pecorino and Parmesan
45g unsalted butter
1 1/2 tbsp finely chopped flat-leaf parsley
1 tbsp finely chopped chives or basil
1) In a medium saucepan, gently heat the oil with the garlic, and cook until softened, about 3 minutes. Add the pepper flakes and cook for 30 seconds more.

2) Add the stock and milk and bring to a boil over high heat. While whisking constantly, slowly pour the polenta into the hot liquid. Stir in the salt. Lower the heat to a gentle simmer and cook, stirring frequently, until the polenta is creamy and smooth, about 30 minutes.

3) Remove the polenta from the heat and stir in the cheese, butter and the herbs. Serve.
