Pork and Holy Basil Stir-fry

2 long red chillies, sliced
2 prik ki noo chillies (small hot chillies)
8 small Thai garlic cloves (4 large garlic cloves)
2 tbsp vegetable oil
1 brown onion, sliced
300g pork mince
3 tbsp fish sauce
2 tsp sugar
1 tbsp oyster sauce
½ cup holy basil leaves
1 fried egg

1. Use a mortar and pestle to pound chillies and garlic to a rough paste.

2. Heat oil in a wok over high heat. Add the chilli garlic paste and onion and stir-fry for about two minutes. Add pork mince, fish sauce and sugar. Stir-fry until pork is just cooked. Stir through oyster sauce and holy basil.

3. Ladle onto a plate and top with a fried egg.
