Posh Jasmine Iced Tea

4 jasmine tea bags
700ml boiling water
2 sticks cinnamon bark
2 star anise
2 tbsp good honey
700ml organic apple juice, chilled
Strawberries, for serving
Raspberries, for serving
Sorbets (such as blood orange, peach, mango), for serving
Mint sprigs, for garnish
Lemon slices, for garnish

In a large glass heatproof pitcher, steep the tea bags in boiling water. Add the cinnamon bark, star anise and let it infuse for five minutes.

Strain the steeped tea and then stir in the honey and mix well. Cool the tea to room temperature then chill in the refrigerator for one hour.

When ready to serve, stir in the apple juice. Pour into glasses topped with some ice cubes, or pour over scoops of sorbet. Tumble in fresh fruit and garnish with mint sprigs and lemon slices. Serve with fun straws.
