Prawn cakes with grain mustard remoulade

For the prawn cakes
Cooking spray
350g cooked prawns, chopped
2 to 3 tbsp mayonnaise
1 large egg, lightly beaten
2 tbsp seasoned dry breadcrumbs
1 tbsp fresh chives, chopped
1/2 tsp salt
1/4 tsp freshly ground black pepper
For the grain mustard remoulade
60ml mayonnaise
1 tbsp grain mustard
1) Coat a griddle or nonstick frying pan with cooking spray and set over a medium-high heat to preheat.
2) In a medium bowl, with a spoon, combine the prawns, mayonnaise, egg, breadcrumbs, chives, salt and black pepper. Mix well and then shape the mixture into 4 cakes, each about 3cm thick.
3) Place the cakes on the hot griddle and cook 3 minutes per side, flipping with a spatula, until cooked through. Remove from the griddle.
4) While cakes are cooking, in a small bowl, with a spoon, combine the mayonnaise and grain mustard. Mix well. Serve the prawn cakes with the remoulade spooned over the top.
