Prawn mashed potatoes

8 to 10 medium red new potatoes, skin on, sliced 1/2-cm thick
120ml hot milk
115g butter
1/2 cup sour cream
Salt and pepper
225 g cooked, chopped prawns
1 tsp paprika
1) Preheat the oven to 190C/Gas 5. Cook the potatoes in boiling water in a medium pan for 15 minutes, or until fork-tender.

2) Mash the potatoes in a mixing bowl. Add the hot milk, butter, sour cream and salt and pepper, to taste. With an electric mixer, beat until moderately smooth. Don't over beat; a few lumps are nice.

3) Add the prawns and whip until mixed. Adjust the thickness of the mixture by adding more milk if desired. Stir in the paprika for flavour and colour. Reheat in the oven before serving, if needed.
