Roasted chilli queso fundido

60g unsalted butter
4 tbsps plain flour
300ml whole milk, heated
350g Monterey Jack or spicy cheese, grated
2 large grilled or roasted chillis, peeled, seeded, thinly sliced
3 tbsps freshly chopped coriander leaves
1/4 tsp salt
1/8 tsp freshly ground black pepper
Blue or white corn tortilla chips
1) Melt the butter in a medium saucepan over medium heat. Add the plain flour and cook for 1 minute.

2) Whisk in the milk and cook until slightly thickened. Remove from the heat and whisk in the grated spicy cheese until smooth. Stir in the chillies, coriander seeds, salt and pepper.

Transfer to a serving bowl and serve with the chips.
