Roasted Brussels sprouts

750g Brussels sprouts
3 tbsp good olive oil
3/4 tsp salt
1/2 tsp freshly ground black pepper
1) Preheat the oven to 200C/Gas mark 6. Cut off the brown ends of the Brussels sprouts and pull off any yellow outer leaves. Mix them in a bowl with the olive oil, salt and pepper.

2) Turn out onto a baking tray and roast for 35 to 40 minutes, until crisp on the outside and tender on the inside. Shake the pan from time to time to brown the sprouts evenly.

3) Sprinkle with more salt to taste (I like these salty like chips) and serve immediately.
