Roasted prawns with Thousand Island dressing

For the prawns
250g large raw prawns, peeled, deveined
1/2 tsp salt
1/2 tsp freshly ground black pepper
1/2 tbsp olive oil
1/2 tbsp freshly squeezed lemon juice
For the Thousand Island dressing
180ml mayonnaise
60ml tomato ketchup
1 tsp minced capers
1 tsp minced gherkins
1 tsp sweet pickles
1 tsp lemon juice
Pinch salt
Pinch freshly ground black pepper
1) Preheat the oven to 200C/Gas mark 6. Place the prawns in a baking tray and sprinkle with the salt and pepper. Pour the olive oil and lemon juice over the prawns and roast in the oven for 5 to 6 minutes.
2) For the dressing, place all the ingredients in a bowl and stir until blended. Serve the dressing with the roasted prawns.
