Salmon salad

1kg cooked salmon, chilled
3 sticks celery, diced
1 small red onion, diced
2 tbsp minced fresh dill
2 tbsp capers, drained
2 tbsp raspberry vinegar
30ml good olive oil
1/2 tsp salt
1/2 tsp freshly ground black pepper
1) Break the salmon into very large flakes, removing any skin and bones, and place the salmon in a bowl.
2) Add the celery, red onion, dill, capers, raspberry vinegar, olive oil, salt and pepper. Season, to taste.
3) Mix well and serve cold or at room temperature.
