340g jasmine rice, washed until the water runs clear
475ml water
2 spring onions, chopped
Handful fresh coriander leaves, coarsely chopped
Dash toasted sesame oil
Light soy sauce, to taste
Place the rice in a heavy-bottomed saucepan and add the water. Bring the pan to a boil, and then cover it with a tight-fitting lid. Reduce the heat to low and cook for 15 to 20 minutes.
Uncover the pan and remove the heat. Fluff the rice grains with a fork, stir in the remaining ingredients and serve immediately.
