Sea Bass Ceviche with Mint, Cucumber and Chilli

4 fillets of sea bass, skinned and pin boned
1/2 cucumber, diced
1 red onion, diced
2 green chillies, diced
2 limes
1 tsp sugar
Small piece ginger, grated
Sprig mint, julienned
Drizzle olive oil
1 tsp soy sauce

Slice the sea bass into thin pieces and lay out on a cold plate.

Place all the other ingredients apart from the mint into a bowl and season.

Season the sea bass, spoon the mixture all over the fish and finish with the mint.
