Seafood Lettuce Wraps

Groundnut oil
200g raw prawns, finely chopped
400g scallops, finely chopped
¼ fresh pineapple, peeled and finely diced
1 tsp garlic, minced
1 tsp ginger, minced
2 tsp sesame oil
2 tsp light soy sauce
2 tsp dry sherry
Handful of rehydrated Chinese wood ear mushrooms
For the Serving
Red chillies, sliced
Spring onions, sliced
Coriander
Mint
Toasted cashews
1. Mix the top ingredients, except the oil, together, season lightly and toss in the oil in a large frying pan or wok until hot and cooked through.
2. Spoon the mixture into individual lettuce cups and garnish with the red chillies, spring onions, coriander, mint and toasted cashews.
