Shiitake mushroom brown rice

1 tbsp sesame oil, for frying
6 shiitake mushrooms, stemmed and sliced
225 g brown rice
2 tbsps soy sauce
225 ml chicken stock
225 ml mushroom stock
1 tbsp sesame oil
60 g spring onions, sliced

1) Preheat the oven to 180C/Gas 4.

2) Put the oil in a large cast iron casserole over a medium heat. Add all the remaining ingredients and stir to combine.

3) Place the lid on the casserole and place it in the oven for 30 minutes. Fluff the rice when ready to serve.
