Sliders with Chipotle Mayo

For the chipotle mayonnaise

1 cup mayonnaise
2 chipotle chillies in adobo sauce
1 tbsp adobo sauce
1/2 lime, juiced
Salt and freshly ground black pepper

For the sliders

500 to 750g minced beef
Salt and freshly ground black pepper
Cheese slices, your choice
Mini burger buns

For the burger bar (if desired)

Chipotle mayonnaise
Red onion slices

For the chipotle mayonnaise:

Add all the ingredients to a food processor and puree. Season, to taste, with salt and pepper.

For the sliders:

Preheat a griddle to medium-high heat. Form the meat into 60g to 90g sliders or mini-burgers, packed tightly. Season with salt and pepper.

Place the sliders on the griddle. Wait until they are nice and crusty on the first side, about 4 to 5 minutes, before flipping, then cook for another 4 minutes.

When the sliders are almost done, top with the desired cheese and close the griddle, allowing the cheese to melt.

Place the sliders on mini baps and top with the chipotle mayonnaise and any other desired toppings.
