Smoked salmon and vegetable cream cheese bagels

2 sesame bagels
450g cream cheese, at room temperature

For the Vegetable Cream Cheese

2 tbsps minced spring onions, white and green parts
2 tbsps finely chopped carrot
4 slices smoked salmon
2 tbsps finely chopped celery
2 tbsps finely chopped radish (2 radishes)
2 to 3 pinches salt
1 pinch finely ground black pepper
1) Slice the bagels in half horizontally and spread 1 tablespoon of the vegetable cream cheese over the bottom half of each bagel.

2) Arrange 2 slices of smoked salmon on the cream cheese and place the remaining bagel halves on top. Cut the bagels in half and serve.

For the vegetable cream cheese:
1) Place the cream cheese, spring onion, carrot, celery, radish, salt and pepper in the bowl of an electric mixer fitted with the paddle attachment and mix on low speed until blended. Makes 6 servings.
