Smoked Salmon with Apple-Horseradish Cream

A simple, sophisticated buffet-style solution to morning entertaining.

6 cups broccoli florets, steamed, divided
75g grated apple
60ml (4 tbsp) low-fat natural yoghurt
60ml (4 tbsp) light mayonnaise
1 tsp Dijon mustard
1 tbsp prepared horseradish
1 (350g) pack of smoked salmon
1 loaf black bread, sliced into wedges
Lemon wedges
Capers
1) Steam the broccoli in a colander over simmering water or in the microwave until tender-crisp. Set aside.

2) Meanwhile, in a medium bowl, whisk together the apple, yoghurt, mayonnaise, mustard and horseradish.

3) Arrange the salmon on a serving platter with the broccoli. Arrange the black bread slices alongside and garnish with the lemon wedges and capers.
