Smoky margarita

55g tequila (recommended: El Tesoro)
25g Triple Sec
25g fresh lime juice
3/4 tsp simple syrup
Ice cubes
15oz mezcal (recommended: Del Maguey Chichicapa Single Village Mezcal)
1) Place the tequila, Triple Sec, lime juice, and simple syrup in a cocktail shaker and shake until combined.

2) Serve over ice in a rocks glass and pour mezcal on top; do not stir the mezcal into the drink, as it should float on top.

For the simple syrup:
1) Combine the ingredients in a small saucepan. Bring to a boil and cook until the sugar is dissolved.

2) Remove from the heat and cool. The syrup can be stored in the refrigerator for up to a month.
