Smoky cheese chips

1 large packet of frozen waffle cut chips
25g butter
2 tbsp plain flour
2 tbsp tomato puree
500ml milk
200g grated Cheddar cheese
2 chipotle-smoked jalapeno peppers in adobo, chopped, plus 2 spoonfuls sauce
1) Bake waffle chips to package directions. Heat butter 1) Bake the waffle cut chips as directed on the packet.

2) Heat the butter in a small pan over a medium heat and whisk in flour. Cook for flour a minute then add the tomato puree. Cook the paste for a further minute and then whisk in milk. When sauce comes to the boil, stir in the cheese and chipotles and season the to taste.

3) Remove the chips from oven when crisp and golden brown and serve topped with the thick cheese sauce.
