Southern Fried Chicken

Oil, for frying, preferably groundnut oil
3 eggs
240ml hot red pepper sauce
1 1/4kg chicken, cut into pieces
2 cups self-raising flour

For the house seasoning

1 cup salt
1/4 cup pepper
1/4 cup garlic powder
1) Heat the oil to 180C in a deep pan or fryer. Do not fill the pan more than half full with oil.

2) In a medium bowl, beat the eggs. Add enough hot sauce so the egg mixture is bright orange (about 240ml).

3) Season the chicken with the house seasoning. Dip the seasoned chicken in the egg and then coat well in the flour.

4) Place the chicken in the preheated oil and fry until brown and crisp. Cooking time is approximately 13-14 minutes for dark meat and 8-10 minutes for white meat.

House seasoning:
1) Mix the ingredients together and store in an air-tight container for up to 6 months.
