Southwestern avocado and black bean salad

1/2 cup freshly chopped coriander leaves
3 tbsps extra-virgin olive oil
2 tbsps freshly squeezed lime juice
2 or 3 dashes hot sauce (recommended
4 cups chopped romaine lettuce
2 avocados, peeled, diced
2 cups fresh or frozen corn kernels, thawed, drained
2 (415g) tins black beans, rinsed, drained
1 cup chopped cherry tomatoes
About 3/4 cup (90g) grated Pepper Jack cheese
1) In a small bowl, whisk together the coriander, oil, lime juice and Tabasco.

2) In a large serving bowl, add the lettuce, avocado, sweetcorn, beans, tomatoes and cheese.

3) Add the dressing and toss well. Season with salt and pepper, to taste, and serve.
