Southwestern coleslaw

1 medium jicama, sliced into thin strips (about 3 cups)
1/4 head red cabbage, thinly sliced (about 5 cups)
1 red onion, thinly sliced (about 1 cup)
1/2 cup fresh coriander leaves, chopped
1/4 cup mayonnaise
1/2 cup low fat buttermilk
1 tbsp lime juice
Salt and pepper
1) In a large bowl, toss together the jicama, cabbage, onion and coriander.

2) In a small bowl whisk together the mayonnaise, buttermilk, lime juice, salt and pepper.

3) Pour the dressing over the vegetables and toss to combine.
