Soy and Chilli Bean Beef Stew

2 garlic cloves, crushed
2 inch piece fresh root ginger, peeled and sliced
1 red chilli, deseeded and chopped
1 onion, sliced
2 medium carrots, cut into 2 centimetre thick slices
1kg braising beef, cut into large chunks
1 litre vegetable stock
2 tablespoons chilli bean paste
1 tablespoon light soy sauce
1 tablespoon dark soy sauce
2 teaspoons brown sugar
1 spring onion, sliced
1 small handful fresh coriander, sliced
Steamed buns, to serve

1. Put all the ingredients, except the spring onion and coriander into a large pan and bring to the boil. Turn the heat down to low, cover the pan and simmer for 2 hours.

2. Garnish with the spring onion and coriander and serve with steamed buns.
