120ml olive oil
1 bunch chopped spring onions
600g frozen chopped spinach, defrosted
2 tbsps chopped fresh dill
3 extra large eggs, lightly beaten
200g feta cheese, crumbled
1/4 tsp salt
1/4 tsp freshly ground black pepper
40 sheets frozen filo dough, defrosted overnight in the refrigerator
225g unsalted butter, melted
50g plain dry breadcrumbs
1) Preheat the oven to 200°C/gas mark 6. Heat the olive oil in a frying pan and add the spring onions. Cook for 5 minutes or until soft.

2) Meanwhile, squeeze most of the water out of the spinach and place it in a bowl. Add the spring onions, dill, eggs, feta, salt and pepper and mix together.

3) Keep the filo pastry sheets covered with a damp kitchen towel. Unfold 1 sheet of filo, brush with melted butter and sprinkle with breadcrumbs. Lay a second sheet of filo over the first, brush with melted butter and sprinkle with breadcrumbs; repeat until 10 sheets have been used.

4) Spoon around 150g of the spinach mixture into a sausage shape along one edge of the filo dough. Roll it up. Brush the top with butter and score the roll into 2.5cm rounds.

5) Place on an oiled baking tray. Repeat until all the pastry and filling have been used. Place in the oven and bake for 12 minutes or until the edges are lightly browned. Serve warm.
