Spicy butterscotch pudding

2 tbsp cornflour
110g light brown sugar
1 pinch salt
240ml milk
240ml half-and-half
2 tsp vanilla extract
1 tbsp butter
1/2 tsp ground cinnamon
1 dash cayenne pepper
1) Whisk together the cornflour, sugar and salt in a saucepan until smooth. Add the milk and single cream and stir to combine.

2) Bring the ingredients to a simmer over a medium heat, whisking constantly. Cook until the mixture begins to thicken.

3) Remove the pan from the heat and stir in the vanilla, butter, cinnamon and cayenne. Pour the pudding into 4 small serving bowls and chill for 1 hour before serving.
