Courgette sandwiches

2 medium courgette
Salt and freshly ground black pepper
Flour
1 egg beaten with 240ml milk
Olive oil
12 slices whole-wheat bread, toasted
Mayonnaise
1 large onion, thinly sliced
6 slices ham, fried
1) Slice the courgette into 0.5cm thick rounds. Leave to stand until moisture forms on the sides.

2) Salt and pepper both sides, dip in the flour, then in the egg/milk mixture, then in the flour again.

3) In a deep frying pan or saucepan, heat about 5cm of oil over a medium heat. Fry the courgette slices until lightly browned on both sides.

4) Drain well on paper towels. Spread the toast with mayonnaise and make sandwiches with the courgette, onions and ham.
