Stuffed peppers

3 tbsp cooking oil
100g chopped celery
1 pepper, chopped
1 onion, chopped
225g breakfast sausage
2 garlic cloves, finely diced
225g cream cheese
20g freshly chopped parsley leaves
1 tbsp hot sauce
25g bread crumbs
20 Anaheim or Poblano peppers, cut in half, seeds removed
1) In a saute pan over medium-high heat add the oil. Once heated add the celery, peppers and onion and saute for about 8 mins. Add sausage and garlic and brown. Add cream cheese and stir until melted. Take off heat and stir in parsley, hot sauce and bread crumbs. Let cool.

2) Preheat oven to 200C/Gas 6.

3) Stuff peppers with vegetable and cheese mixture and bake for 15 mins or grill until char develops.
