Sweet potato souffle

1.3kg sweet potatoes, cubed
1 tsp salt
340g softened butter, plus more for greasing dish
6 large eggs, beaten
70g self-raising flour
600g sugar
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
1) Preheat the oven to 180C/Gas 4. Boil the potatoes in water with the salt until tender. Drain and cool to room temperature.

2) Process the potatoes with the remaining ingredients in a blender and pour into a greased 20cm by 30cm baking dish.

3) Bake in the oven for 1 hour or until set and lightly browned. Serve immediately.
