To make the gin:
20g of loose leaf earl grey tea
750ml bottle of gin
To make the cocktail:
40ml of tea gin
35ml of standard uninfused gin
30ml lemon juice
45ml elderflower cordial
20ml sugar syrup
1 heaped teaspoon lime marmalade
Infuse the loose leaf earl grey tea into a 750ml bottle of gin, shake and leave for exactly two hours then strain.
To make the cocktail:
1. Fill a cocktail shaker with ice. Add the ingredients and shake.
2. Strain into a teapot packed with ice and serve chilled in teacups with a slice of fresh lemon. Ice cubes instead of sugar cubes on the side.
