Tom Macy's The Green Giant

52.5ml Tanqueray Ten
22.5ml fresh lemon juice
15ml Dolin Dry Vermouth
30ml simple syrup
6 sugar snap peas
8-10 tarragon leaves

Halve and muddle 4 of the peas with the tarragon in the simple (sugar) syrup. Add the remaining liquids and shake. Strain into a double rocks glass with crushed ice and garnish with the remaining peas.
