Tuna caper crostini
Tuna caper mayonnaise and crunchy crostinis are party perfection.

1 baguette
2 (170g) cans white meat tuna packed in water, drained
4 tbsp capers, drained
1 large shallot, minced
80ml extra-virgin olive oil
3 tbsp fresh lemon juice
2 tbsp chopped fresh parsley leaves
15 to 20 grinds of black pepper
1) Preheat oven to 180C / gas mark 4.
2) Slice baguette into 1 1/4 cm-thick slices and place on a baking sheet. Bake until toasted and golden, about five to ten minutes.
3) Combine all remaining ingredients in a mixing bowl and mix thoroughly.
4) Top each toasted baguette slice with about one tablespoon of the tuna salad.
