Yam, carrot and orange-chipotle coleslaw

50ml orange marmalade
1 orange, zested, juiced
2 tbsps adobo sauce from tinned chipotle in adobo (pop the chipotles in plastic bag and freeze for later use)
75ml white wine vinegar
75ml rapeseed oil
500g yam root, peeled
500g carrots, grated
60g coriander leaves, freshly chopped
1) Whisk the marmalade with the orange juice, chipotle sauce, vinegar and oil.

2) Cut the yam into pieces that fit in the feeder of a food processor. Place the grater attachment blade in the bowl and grate the yam.

3) Toss the yam and carrots with the dressing and coriander.
