Courgette Bread with Lemon-Honey Butter

3 eggs
1 tablespoon lemon zest
1 cup oil
2 cups flour
1 cup sugar
2 teaspoons baking soda
1 teaspoon vanilla
1 teaspoon baking powder
2 cups courgette, shredded
1 teaspoon salt
1 teaspoon cinnamon

For the Lemon-Honey Butter

4 ounces butter, softened
1 tablespoon honey
1 tablespoon lemon zest

Preheat oven to 175°C degrees F.

In large bowl beat together eggs, oil, sugar, and vanilla. Slowly add the courgettes. Add lemon zest and mix thoroughly.

In a separate large bowl combine flour, baking soda, baking powder, salt, and cinnamon. Slowly add the courgette mixture until completely combined.

Divide batter into two greased loaf pans. Bake for about 1 hour and 15 minutes, until skewer comes out clean.

For the Lemon-Honey Butter: Combine all ingredients and mix together well. Chill and serve.
