Zucchini Hash

1 tbsp extra-virgin olive oil
1 tbsp butter
225g zucchini, cubed
225g yellow squash, cubed
1/2 red onion, diced
4 tbsp chives, cut into 1cm pieces
Salt and freshly ground pepper

In a large skillet, heat oil and butter over high heat. Add zucchini, squash and onion. Cook until softened and golden, about ten minutes. Remove from heat and mix in chives. Season with salt and freshly ground black pepper, to taste.
