Method

Old or over ripe berries are the best for this lightly fermented drink.

1. Simply crush the berries with the sugar.

2. Place in a steralised jar with a napkin and rubber band on top and leave in a warm place for two days.

3. The napkin will let the raspberries breath and keep bugs out. It will bubble away as it ferments. Once ready pass it through a fine sieve to remove the seeds.

4. Add about 30ml to a glass of you favourite sparkling wine.
