Method

1) Season the steak with salt and pepper and refrigerate until ready to use.

2) Heat the butter in a medium saucepan over a medium heat until bubbling. Crush the garlic with the side of a heavy knife. Add the garlic, onion and carrot to the saucepan and cook, stirring, until onion is translucent.

3) Add the stock and maple syrup, then increase the heat to high and boil for 10 minutes. Add the beer, simmer briefly and remove from the heat.

4) Heat the grilling element. Place the steak on the grilling tray and cook for 2-3 minutes per side for medium rare. Remove from the oven and allow to rest on a carving board for 5 minutes.

5) Return the sauce to a simmer, add the rosemary and season with salt and pepper, to taste. Strain the sauce.

To serve, thinly slice the meat and spoon the sauce over it.
