Step 1

Put a large, non-stick saucepan on a medium heat. Add 1 tbsp of oil with the red onion a sweat for 8 minutes until soft. Next add all the ingredients to the pan, except the chopped pear, bring to a gentle simmer and stir to combine. Cook for around 5-10 minutes and keep stirring until the sugar dissolves.    

Step 2

Reduce the heat to low then add the chopped pear and cook for around 20-25 minutes until the mixture has thickened into a chunky relish.    

Step 3

Transfer the cranberry chutney into sterilised jars. Seal the jars tightly and store them in a cool, dark place.
