Apple Ginger Pork Chops

Ready in just 35 minutes and blissfully easy to make, these apple ginger pork chops will elevate your midweek meals.

Method

  1. Put the chops in a resealable plastic bag, and add the apple cider vinegar, 1 tbsp of the olive oil, the ginger, garlic, lemon juice and 1 tsp of both the salt and pepper. Marinate for 30 mins.
  2. Preheat the oven to 180C/Gas 4. In a large saute pan heat the remaining olive oil to almost smoking, then add the pork chops, shaking off excess marinade. Brown on both sides. 
  3.  Place the browned chops on a roasting tray and put in the oven for 20 mins or until internal temperature reaches 55C.
  4.  Meanwhile deglaze the saute pan with wine then add the onions, apples and sultanas and cook until apples are soft and the onions are translucent. Add the butter and salt and pepper, to taste, and keep warm.
  5. Remove the chops from the oven and add to the apple mixture. Serve hot with your choice of vegetables or rice.
