Method

1) Heat a large griddle or nonstick skillet with cooking spray and set over medium-high heat.

2) Season the tomatoes with salt and black pepper and add to the hot pan. Cook for 1 minute on each side, flipping with a spatula, until golden brown. Remove from the heat.

3) In a small bowl, whisk together the mayonnaise, basil, chives, mustard and lemon zest.

4) Spread the mayonnaise mixture on the rolls. Top with the seared tomatoes, catfish, lettuce leaves and red onion.
