Method
Step 1
Place the finely shredded cabbage into a large bowl; add the remaining ingredients and mix together.
Step 2
Pack into a jar, cover the top with a circle of parchment, make sure the red cabbage is pushed firmly down under the liquor, then seal with a lid and leave somewhere to cool for a minimum of 48 hours. Every 12 hours, open the lid to release any gas and push down the parchment.
