Method

1) Heat the griddle to medium. Combine the pomegranate molasses, orange juice and cinnamon in a small bowl. Drizzle the quail with oil and season with salt and pepper.

2) Cook the quail, breast-side down, over a medium heat for about 7 minutes total or until golden brown and slightly charred.

3) When the quail is 3/4 cooked brush with the glaze, turn over, brush the other side with glaze, and continue cooking until just cooked through.

4) Remove from the griddle and serve 2 quail per person.
